Make It: Simple Perch with Almond-Roasted Broccoli

I guess I’m sort of on an almond meal kick. I’ve been putting it in everything lately! For this dinner, I took some fresh lake perch, sprinkled it with salt and pepper, and sauteed it in butter. But the roasted broccoli was definitely the star of this dinner.

I roasted a head of broccoli with topped with 1/4-1/3 C of almond meal, salt, and pepper. It took about half an hour with the oven set at 400 degrees. The almond meal added a nice texture and nutty flavor. Loved it. Better than bread crumbs!

I keep saying that good meals aren’t hard to make if you start with quality ingredients. Well… it’s still true. If you invest in quality ingredients, you’ll have to spend a lot less time in the kitchen trying to make them taste good!
